
Rainbow Chard
Well, actually, it’s more properly called Rainbow Chard – so named because the stalks come in a variety of colours. The yellow is just as bright but not as spectacular, and there is also pale pink, white, pale yellow and an almost orange colour. Honestly, I haven’t altered the colours in this photo – it really is that damn intense.
It’s an heirloom variety of swiss chard (aka “spinach”) – I bought the seeds from the Diggers Club. It grows exceptionally fast and very well in the Sydney region and – bonus! – the more you pick, the faster it grows! Yay!
Verdict? DELICIOUS! Especially when sauteed with a little olive oil, wine and garlic.
