Tell me…isn’t this one of the prettiest salads you’ve ever seen?
It’s also probably the easiest thing to make. This is the second time I’ve made it this weekend and it took me about 5 minutes each time
Take a good handful of mixed salad greens (wash and pick through them first, then dry carefully). With a sharp knife, cut the ends off your blood orange and then slice off the rind. Carefully slice out the segments and scatter over the plate. Squeeze the pulp and collect the juice in a bowl. Add a dash of either red-wine or balsamic vinegar, a dash of good oil (I used extra virgin olive, but macadamia might be nice!) and a grind of black pepper. Taste. Add salt or sugar to bring the dressing into balance – it should be sweet/salty/sharp.
Crumble a sharp goat cheese over the salad and scatter on some toasted pine nuts.
Spoon the dressing over.
Devour!
A couple of good hints for making beautiful salads (According to me):
- Don’t put too many things in. Less is generally more.
- Quality ingredients. If the tomato isn’t ripe or the greens are a bit wilted, then make something else. Life is too short to eat crap stuff.
- Use stuff you like. Which sounds like the stupidest thing but I’ve actually seen people make a salad with spouts and all and then moan about how they hate them. I don’t eat a lot of salads but I’ll eat more if they have all the things I like.
- Ignore all the rules – even these ones. How else will you discover something amazing if you don’t venture off the beaten track??
